guess that most lamb bought more than they ate the end (even This year it seems ...). And we have leftover or raw or roast lamb in our fridge. The proposal is therefore, exploitation of a Cretan κρεατόπιτα, γνωστή στο κρητικό εδεσματολόγιο σαν κρεατότουρτα Χανίων. Ας πάμε λοιπόν δυτικά σήμερα!

Συνηθίζεται το Πάσχα ,προφανώς για να αξιοποιείται το αρνί που μας περισσεύει, ωμό ή βρασμένο. Η ονομασία «τούρτα» χρησιμοποιείται σε πολλά νησιά για κάποιες πίτες. Materials:

B. Filling:


1 - 1.5 kg lamb or goat meat (weighed raw. The amount has to do with how much psachnakia is part of the meat we)

½ κιλό μυζήθρα ξινή

¾ cup beef broth.
2-3 tablespoons chopped fresh mint.


For the topping:


1 κρόκο αυγού αραιωμένο με μια κουταλιά νερό
Σουσάμι αποφλοιωμένο


Επί το έργον:


Πλένουμε το κρέας, το βάζουμε σε κατσαρόλα με νερό που να το σκεπάζει ίσα ίσα και λίγο αλάτι και το βάζουμε να βράσει. Παρατηρήσεις:


1) Το  τυρί που χρησιμοποιούν οι χανιώτες σ’ αυτήν την πίτα είναι η λεγόμενη «μαλάκα» που όμως πολύ δύσκολα το βρίσκουμε ακόμη we in East Kriti.Deite here for the Cretan cheese presentation by Mamalakis. The combination of cheeses that I give a very good result.

6) If the lamb is from our surplus and we have broth, put the dough plain refreshing water and filling a little gravy made with vegetables cube (then of course watch the amount of salt).
