Xydochorta (and a snack ...)


Μια βόλτα στην εξοχή αυτή την εποχή ανοίγει την καρδιά μας και γεμίζει την κατσαρόλα μας! Χαρά Θεού ο Απριλομάης συνήθως. (Φέτος λίγο μας τα χάλασε ο Απρίλης αλλά χρειάζονται και οι βροχές λέει ο κόσμος της υπαίθρου).Αυτή λοιπόν την εποχή πρωταγωνιστούν στο τραπέζι μας τα ξυδόχορτα.

Σε λίγο τα σταχάκια μέχρι να ξεραθούν καλά καλά τα αγριόχορτα και να αρχίσουμε με τα βλίτα και το στίφνο. Δεν υπάρχει εποχή χωρίς χορταρικό στο κρητικό τραπέζι.Τα ξιδόχορτα είναι more resistant to drought than purely winter greens combined with fruit from chlorokoukia, ampelovlastara and retail boiled snails.

η αβρωνιά  κι άλλα χόρτα, πιο ανθεκτικά στην ξηρασία από τα καθαρώς χειμωνιάτικα.


Ξυδόχορτα βραστά

Υλικά:
1 κιλό σταφυλινάκοι, χοιρομουρίδες , μαντηλίδες , κι άλλα χόρτα εποχής
Αμπελοβλάσταρα (προαιρετικά)
2 κούπες καρποί από χλωρά κουκιά (προαιρετικά)
Αλάτι
Ελαιόλαδο
Ξύδι


Επί το έργον:


Τα ξυδόχορτα θέλουν καλό καθάρισμα γιατί είναι σχετικά τραχιά. Έτσι αφήνουμε very tender leaves of peaks and cut the rough edges. Like other greens, wash them very well. Leave them for a while in a pan with salted water. Έτσι αφήνουν τη σκόνη και τα χώματα που πιθανόν να έχουν.

Πλένουμε το κρέας και το αφήνουμε να στραγγίξει. Το αλατίζουμε.Βάζουμε σε αντικολλητικό τηγάνι ένα κουταλάκι λάδι και το βάζουμε να ζεσταθεί. Προσθέτουμε το κρέας και το αφήνουμε μέχρι να ξεκολλά alone. The turn from all sides.

Comments:

Συνηθίζεται το Πάσχα ,προφανώς για να αξιοποιείται το αρνί που μας περισσεύει, ωμό ή βρασμένο. Η ονομασία «τούρτα» χρησιμοποιείται σε πολλά νησιά για κάποιες πίτες. Πλένουμε το κρέας, το βάζουμε σε κατσαρόλα με νερό που να το σκεπάζει ίσα ίσα και λίγο αλάτι και το βάζουμε να βράσει.
